Overnight Oats
Serves 2
- 100g oats
- 2 tbsp. chia seeds
- 1 tbsp. pumpkin seeds
- 350ml almond milk (or any plant-based milk)
- Pinch of ground cinnamon
- Sprinkle of vanilla powder or a few drops of extract
- 1 grated apple including skin
- 3 dried apricots cut in to small pieces
- Flaked almond or coconut to serve
- In a large glass bowl (or mason jar) add all ingredients and mix together
- Cover with cling film and leave overnight in the fridge
- In the morning, mix again well, then pour out desired serving into a bowl.
- Can be served hot or cold.
