Five Bean Salad
Serves 1
- ½ tin of mixed beans
- Handful of washed mixed salad leaves
- Handful of red cabbage, chopped
- A few olives
- ½ avocado, chopped
- Fresh mint, roughly chopped
- A sprinkle of pumpkin seeds
- Dressing: 2 tsp olive oil with 1 tbsp. apple cider vinegar, ½ tsp Dijon mustard, ½ tsp runny honey.
Mix all ingredients together and add dressing.
