Rainbow Salad
- ¼ red cabbage, shredded
- 1 carrot, grated
- 1 small raw beetroot, grated
- ½ yellow pepper, sliced
- ¼ red onion, sliced
- 1 handful of kale
- A small handful of cherry tomatoes
- ½ avocado, chopped
- 1 tbsp. pumpkin seeds
- 1 tbsp. chopped walnuts
Dressing
- 1 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- Oregano
- Black pepper
- Make up the salad dressing.
- In a large bowl add all of the salad ingredients.
- Stir in the salad dressing to serve.
