Rainbow Salad

  • ¼ red cabbage, shredded
  • 1 carrot, grated
  • 1 small raw beetroot, grated
  • ½ yellow pepper, sliced
  • ¼ red onion, sliced
  • 1 handful of kale
  • A small handful of cherry tomatoes
  • ½ avocado, chopped
  • 1 tbsp. pumpkin seeds
  • 1 tbsp. chopped walnuts

Dressing

  • 1 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • Oregano
  • Black pepper
  1. Make up the salad dressing.
  2. In a large bowl add all of the salad ingredients.
  3. Stir in the salad dressing to serve.
