Spicy Chickpea Burgers with Salad & Sweet Potato Wedges
Serves 4
- 2x tins of chickpeas, drained
- 100g oats (use gluten free if needed)
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp mild chilli (or more if you like chilli)
- Handful fresh coriander, chopped (optional)
- Seasoning
- Oil for frying (rapeseed or olive)
- 2x medium sweet potato, scrubbed and cut in to wedges
- 1 tbsp. hummus per person
- To serve side salad (spinach, watercress, rocket, tomato & spring or red onion)
- Preheat oven to 190C or Gas Mark 5.
- Toss sweet potato chips in 1 tbsp. of olive oil.
- Spread out on a baking tray and bake for 30 mins until browned.
- Drain the chickpeas.
- In a food processor add the oats, spices, seasoning and chickpeas.
- Blitz to make a rough mix (not too smooth).
- Add the fresh herbs and process to mix in.
- If mixture is too dry to form a burger, add a little water.
- Take a handful of mixture and flatten in to a burger shape.
- Heat oil in a good non-stick frying pan.
- Fry the burgers for a few minutes each side.
- Serve with salad, sweet potato wedges and a dollop of hummus.
